• Serving: 8-10 Pieces
• Moong daal: 1 cup
• Sugar: 1 cup
• Rice flour: ½ cup
• Cardamom powder: ½ teaspoon
• Grated coconut: 2 tablespoons (optional)
• Ghee: 1 teaspoon
• Oil: For frying
• Water: As needed
• Rinse 1 cup of moong dal under running water to remove impurities.
• Put the moong dal in enough water to soak for at least 4-5 hours or overnight.
• After soaking, drain the water and add the lentils to a pressure cooker. Add enough water to cover them and pressure cook for 3-4 whistles.
• Add the cooked lentils to a pan and mash them using a spoon or blender until you have a smooth paste.
• In a pan, heat one teaspoon of ghee over low heat. Stir continuously into the cooking pan to keep the paste from sticking, and add the lentil paste.
• Gradually sprinkle 1 cup of sugar, ½ teaspoon of cardamom powder, and two tablespoons of grated coconut (optional). Stir well to combine.
• While mixing, continue cooking until it thickens (to the consistency of cookie dough) and becomes dry enough to knead with your fingers.
• After the mixture is cool to room temperature, slowly add one-quarter cup of rice flour to make a dough.
• You need to knead until the dough is smooth and pliable, not too dry or sticky.
• Cut the dough into small pieces.
• Roll each piece into a small ball shape and slightly flattened, about ½ inch thick.
• If you want to get creative, shape your dough into stars, hearts, or other fun shapes with cookie cutters.
• Heat oil in a deep fry pan.
• Make a batch at a time, frying each until the pithas become golden brown and crispy on the outside.
• Allow the pithas to cool slightly before serving. Enjoy it as a snack or dessert.
