Vangyachi Bhaji Recipe for Children

Ingredients Required

• 250 gms of eggplant

• 1 tbsp goda masala or kala masala

• 2 tbsp roasted peanut powder

• 1/2 tbsp tamarind pulp, 1/2 tbsp jaggery

• 2 tbsp fresh ground coconut, 1/2 tsp mustard seeds, oil

• 1/2 tsp turmeric and red chilli powder, water

• freshly chopped coriander, salt, and hing.

Steps to make Vangyachi Bhaji

1. Clean and chop the eggplant into medium-sized slices. Place them in salted water for 10 minutes.

2. Soak  ½ tbsp tamarind in warm water for 5 minutes. Squeeze out a tamarind pulp.

3. Pour oil into the pan. Add mustard seeds, turmeric powder, and hing to the heated oil. Stir well, and then add chopped eggplant with tamarind pulp. 

4. Put a lid on the pan to cover it, and cook it for 5 minutes. 

5. Remove the lid, add spices, salt, jaggery powder and grated coconut.

6. Add peanut powder and stir well once the brinjals are ready.

7. Garnish it with the freshly chopped coriander.

8. Vangyachi Bhaji is ready and can be served with rice, bhakri or chapati.
