Uniappam (Instant) Recipe for Children

• 1/4 cup grated coconut (fresh or dry)

• 1/4 tsp cardamom powder

• A pinch of baking soda (for fluffiness)

• 1/4 cup water or as needed (to make a thick batter)

• Ghee or oil (for frying)

Steps to Make Uniappam (Instant)

1. Prepare the Batter:

◦ Mash the banana in a bowl until smooth.

◦ Add the rice flour, grated jaggery, grated coconut, cardamom powder, and a pinch of baking soda to the bowl.

◦ Mix everything well and gradually add water to make a thick, pourable batter. Let it rest for 10 minutes.

2. Heat the Pan:

◦ Take an appam pan (also called paniyaram pan or aebleskiver pan) and grease each cavity with a little ghee or oil. Heat it on medium flame.

3. Cook the Uniappams:

◦ Pour a small ladleful of batter into each cavity of the pan.

◦ Cover with a lid and let them cook for about 2-3 minutes on medium-low heat until the bottom turns golden brown.

◦ Flip them gently using a skewer or spoon and cook the other side for another 2 minutes.

4. Serve:

◦ Once golden and cooked through, remove the Uniappams from the pan. Let them cool slightly before serving.
