• Drumstick Leaves (Sajana Saga) - ½ cup
• Moong Dal - 5 tsp
• Shredded Coconut - 5 tsp
• Garlic Cloves - 10-12
• Milk - ½ cup
• Sugar - ½ tsp
• Oil - 3-4 tsp
• Urad Dal - 1 tsp
• Mustard Seeds - 1 tsp
• Dry Chilies - 1-2
• Salt as per taste
1. First, wash the drumstick leaves thoroughly to remove any dirt or impurities. Drain the leaves and set them aside.
2. In a dry pan, roast the moong dal on medium heat for 3-5 minutes until it gives off a nutty aroma. This will bring out the dal’s flavour.
3. Mix milk, water, and sugar in a separate vessel and bring them to a boil. Once boiling, add the roasted moong dal and cook until the dal softens.
4. Heat cooking oil in a frying pan over medium heat. Once hot, add mustard seeds, dry red chillies, and urad dal. Allow them to splutter.
5. Add the crushed garlic cloves to the pan and sauté until they turn golden brown. Then, add chopped onions and cook them.
6. Stir in the washed drumstick leaves, followed by turmeric powder, salt, and shredded coconut. Mix everything well.
7. Pour in the cooked moong dal and any remaining liquid, and stir everything together.
8. Cover the pan with a lid and cook on low heat for 5-7 minutes, stirring occasionally to prevent sticking.
9. Remove the pan from the heat once the mixture reaches a dry consistency. Your Sajana Saga Bhaja is now ready to serve!
