You have to collect the following ingredients for the Jhangore Ki Kheer recipe:
• Barnyard millet: 1/2 cup
• Milk: 4 cups (preferably full cream for a rich taste)
• Sugar: 1/2 cup (adjust according to taste)
• Cardamom powder: 1/4 TSP
• Dry fruits: Almonds, cashews, and raisins, chopped (as per preference)
• Ghee: 1 TBSP
• Saffron strands: A pinch
1. You must start by washing the barnyard millet with water. This will help remove impurities. Once you have washed it, soak it for 15 to 20 minutes.
2. Now, get a pan with a thick bottom and heat the ghee in it. Add the soaked millet to the pan and sauté them on low heat, mixing them for 2 to 3 minutes. Once they are cooked, you can smell a nutty aroma.
3. Boil the milk in another pot. Add the cooked millet to the boiling milk. Stir the mixture continuously to prevent lumps.
4. It is time to reduce the pot’s heat to low and let the mixture cook. Stir it regularly to prevent the mixture from sticking to the bottom. The millet will cook properly in 15 to 20 minutes.
5. Add the sugar and mix it to dissolve it. Add the cardamom powder and saffron strands for a delightful flavour and look.
6. Add dry fruits and simmer for five minutes.
7. Jhangore Ki Kheer is ready. You can serve it to the children.
