• Poha: ½ cup
• Cumin and mustard seeds: 1/4th tsp
• Finely chopped tomatoes: 1
• Finely chopped onions: 2
• A pinch of red chilli powder
• A pinch of turmeric powder
• A handful of peanuts
• 2-3 finely chopped sprigs of coriander
• 2-3 finely chopped sprigs of curry leaves
• Lemon juice: 1/4th tsp
• Oil: ½ tsp
• Salt to taste
1. Wash and drain the poha. Then, set it aside.
2. In a shallow pan, sauté the peanuts and set aside.
3. In the same pan, heat the oil and add cumin and mustard seeds for tempering.
4. Once the whole seeds start crackling, add the curry leaves and chopped onion.
5. Sauté until the curry leaves turn crispy and the onion turns translucent.
6. Next, add the chopped tomatoes, turmeric and chilli powders, and salt as needed.
7. Once the tomato softens, add the washed and drained poha.
8. Cook for about 2 minutes on a medium flame.
9. Lastly, add the roasted peanuts, lemon juice, and chopped coriander leaves. Mix well.
10. Bombay Poha is ready to serve.
