• Buckwheat flour: 1 cup
• Water: As needed
• Salt: To taste
• Cumin seeds: 1/2 teaspoon
• Ginger: grated (optional)
• Ghee
Combine all the ingredients, including buckwheat flour, cumin seeds, salt, and grated ginger (if using), in a bowl.
Keep stirring it rigorously to avoid lumps while preparing a thick batter. The consistency of the batter has to be smooth.
This dish is ideal to prepare in a non-stick pan or tawa. Heat the pan on medium heat and grease it with ghee.
Pour a ladleful of batter into the pan to form a round shape. Cook it for 3-4 minutes on one side. Once it turns golden brown, flip and cook the other side similarly. Repeat the process with the remaining batter.
Once done, you can serve it rice or chapatis. Chutneys and curries can be a great addition to the delicious and tangy taste of baadis.
